Your cat may simply be trying to stay safe when she is able to by enjoying her favorite foods and keeping away from newer options. She does this because she knows the other foods are safe for he to consume. Being able to choose which foods to eat is a luxury that some of her wild ancestors didn’t have, as they would need to steer clear of things they were unsure of. Some encouragement and patience may help your pet become more comfortable with different things to munch on so you can help her to branch out a bit.
